13. What’s the weather like today? Is it about average for the time of year?

It’s been 78° F-85° F for almost a month. It’s beautiful. Tomorrow it’s going to rain all day and be high of 65°. We need the rain. This is about average for us. It always feels like spring in January and February. We haven’t had much of a winter so far. And now it’s too late to have cold days. March is spring for sure.

What are new ways you can measure progress this year?

I said I wanted to write more and I did. I made a lot of moodboards too. (I love making them). I’ve got to get busy and write some more things before the month is up.

I also like to try a new recipe every Sunday, in hopes that we’ll like something and go into my recipe book. I not only make the main dish but I. Make dessert too. I thought I would put the recipe in case anyone would like to try it.

Chicken Bubble Biscuit Bake Casserole 🥄

Ingredients:
- 2 cups cooked chicken, shredded or diced
- 1 can (10.5 oz) cream of chicken soup or cream of mushroom
- 1/2 cup sour cream or plain Greek yogurt
- 1/2 cup milk
- 1 cup frozen mixed vegetables (peas, carrots, corn, beans)
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 1 can (16 oz) refrigerated biscuit dough, cut in quarters
- 1 cup shredded cheddar cheese or mozzarella
- 1 tablespoon melted butter (optional, for brushing)

Steps:
1. Heat oven to 350°F. Lightly grease a 9x13-inch pan.
2. In a large bowl, mix chicken, soup, sour cream, milk, vegetables, garlic powder, onion powder, salt, and pepper until combined.
3. Gently fold in the biscuit pieces to coat them.
4. Spread the mixture into your prepared pan. Top with shredded cheese.
5. Cover with foil and bake fomr 20 minutes. Remove foil. Bake 10 to 15 minutes more, until biscuits are golden and cooked through.
6. Brush melted butter on top if you like. Let rest a few minutes before serving.

For extra flavor, add chopped fresh herbs or a little hot sauce when mixing your filling.

Posting a little early.

How many flights of stairs would you consider walking up in a building, or do you always take the lift/elevator?

Only two. I’m on oxygen, so my pulmonary hypertension keeps me from doing certain things. I can walk downstairs just fine but going up is very difficult. Basically, I always use elevators.

What would it feel like to step out of your comfort zone? How can you step out of your comfort zone more this year?

I have always been shy but I took part in Snowflake Challenge for four years to build up my confidence and stop being so shy. I have friends all over the place. I love having something to read on my reading page every day. So, now I find it easier to step out of my comfort zone. I joined quite a few communities and write and create moodboards and post a few times a week.
