This is really good and pretty easy.
I don't put the bacon in it anymore. You don't have to use it.
Ingredients:
6 slices of cooked bacon
4 cooked and shredded chicken breasts
32 oz. bag of frozen tater tots
1/2 cup ranch dressing
1 cup milk
2 tbsp all-purpose flour
3 tbsp butter
1 1/2 cups shredded mild cheddar cheese
Salt and pepper to taste
Instructions:
Preheat the oven to 425 degrees Fahrenheit.
In a separate pan, cook the chicken until fully cooked. Allow it to cool slightly, then shred using a mixer.
In a small saucepan, melt the butter over low heat. Whisk in the flour along with salt and pepper to taste.
Gradually whisk in the milk into the flour mixture, adding it slowly to avoid clumps. Stir until creamy, then mix in the ranch dressing.
Spray a 9x13-inch baking dish with non-stick spray. Layer the shredded chicken at the bottom, then the creamy sauce, half of the cheese, and finally the tater tots.
Bake for 20 minutes uncovered, until the tater tots start to turn golden and crisp.
While the casserole is baking, crumble the cooked bacon and set it aside.
After 20 minutes, top the casserole with the remaining cheese and crumbled bacon. Return to the oven for another 5 minutes, or until the cheese is melted and bubbly.
Remove from the oven and let it cool for a few minutes before serving. Enjoy!
